Brandy is obtained from the distillation of new Sangiovese grosso wine, locally named Brunello, with a steam system and discontinuous method with low-grade columns.

The cutting of heads and tails is done manually by the master distiller, and only on the basis of the tasting carried out with each batch.

Brandy is obtained from the distillation of new Sangiovese grosso wine, locally named Brunello, with a steam system and discontinuous method with low-grade columns.
The cutting of heads and tails is done manually by the master distiller, and only on the basis of the tasting carried out with each batch.
The distillate rests in 2000 liter oak barrels which have the task of both transferring coloring substances and allowing slow oxidation and the evolution of the bouquet. Sometimes, following various tastings, it may be decided to transfer the distillate into another oak barrel which may be more or less new and therefore could additionally condition the content to a greater or lesser extent.

During the eight years of aging, the Brandy takes its amber color from the barrel, but the aromas of honey and tobacco are nothing more than the natural evolution of the aromas found in the distillate before aging in wood.

It has an antique gold color and all the noble characteristics of Brunello with a wide and diffused aroma, with perceptible non-invasive notes of vanilla and it a broad, velvety and warm flavor.
