Mocali

The Mocali estate to be acquired in years 50 by Mister Ciacci Dino, that been one of the twentyfive promoters of the “Consorzio del Brunello di Montalcino”, he was grandfather of Ciacci Tiziano that is the present owner.
The MOCALI estate is situated to the South-West of Montalcino at an altitude of 350 metres s.l.m., we walk for about 2 km, a dirt road nestled in the range of Mediterranean forest is characterized mainly by oaks and arbutus, arrived in the company enjoys a panoramic view of the valley vineyards of Montalcino in the background with a view from the slopes of Monte Amiata extends to the Maremma.

The company covers about 43 ha, 2 of olive groves and 10 are specialized vineyards. Immersed in Mediterranean forests we see the vineyard of Raunate, flanked by a tall pine forest
where you can discover the remains of ancient kilns active in past centuries for the production of lime (quicklime) formed by the high percentage of this stone, known locally Balsano. The soil is rich of minerals alternating with limestone.

Brunello
di Montalcino

Characteristic

100% Sangiovese grosso. Alcoholic fermentation in inox tank. Ageing 1 year in big barrows of slavonia oak and 2 years in french oak. Colour ruby red garnet, flavours of ripe berry, spicy scents of vanilla, cinnamon and tobacco. Hot entry in mouth, sof and full, very persistent on final.

Vermentino
Bianco Toscano

Characteristic

100% Vermentino. Before being destemmed and pressed softly the grapes are cooled to a temperature of about 6°C; after 24 hours begins a slow fermentation in stainless keeping the temperature below 16 ° degrees, the entire procedure is carried out in the absence of oxygen.

Toscano

Characteristic

90% Sangiovese, 10% Merlot. One part of the grapes fermented on the skins for 36 hours and the remaining are de-stemmed and pressed softly at low temperatures for to preserve the aromas; fermented in stainless steel, the entire procedure is carried out in the absence of oxygen.

Brut
Bianco Metodo Classico

Characteristic

Vinification: The grapes are gently cold pressed in absence of oxygen and then fermented at a controlled temperature. After about six months the wine is bottled with prise de mousse for the secondary fermentation. After 2 years make the remuage for two months and then the wine is disgorged and filled up with a liqueur d’expédition.

Brandy
di Mocali

Characteristic

Brandy is obtained from the distillation of new Sangiovese grosso wine, locally named Brunello, with a steam system and discontinuous method with low-grade columns.

The cutting of heads and tails is done manually by the master distiller, and only on the basis of the tasting carried out with each batch.

Extravergine di Oliva Biologico

Characteristic

Olio Extravergine di Oliva: 40% Leccino, 30% Frantoiano, 30% Moraiolo. Manual harvest, planting density promiscuous, squeeze to cold within 24 hours from the harvest. Method of continuous crushing, natural settling.
